Reading the Menu Like a Barista
How to order your way to a cup that is genuinely yours — a decoder for ratios, roasts, and the words cafés assume you know.

Every specialty café has a quiet vocabulary problem: a wall of words — single origin, honey process, 1:16 — that regulars nod at and newcomers quietly route around by ordering the same safe latte forever. This is a shame, because the menu is not a test. It is a set of dials, and once you can read the dials, you can order a cup that is genuinely yours.
Start with the two that matter most. First, roast: lighter roasts keep the bean's origin flavors — fruit, florals, tea-like brightness — while darker roasts trade those for body and chocolate-and-caramel comfort. If you drink your coffee black, lean light. If you take milk, medium or dark will cut through better.

The ratio is the recipe
Second dial, the ratio. Espresso drinks are a negotiation between coffee and milk. A macchiato is espresso marked with a spoonful of foam. A cortado splits roughly even. A flat white leans milky but stays small and strong. A latte is the generous, mellow end of the spectrum. None is more sophisticated than another; they are simply different answers to the same question — how much milk do you want between you and the coffee?
Filter menus work the same way. Pour-over means made to order, cup by cup — worth the wait when the beans are interesting. Batch brew means a big pot made recently, usually excellent and cheaper. Cold brew is steeped slow and low-acid; iced coffee is brewed hot and chilled fast, brighter and snappier.
Order like you mean it
The final decoder is permission. Ask the barista what they would drink today — it is the single highest-value sentence in the building. They know which beans are singing this week and which drink shows them off. Baristas, as a species, love the question.
Then drink it black, at least once, before milk arrives. You will taste what the fuss was about — and next time, the menu will read less like a wall and more like a conversation you are finally part of.
